You should be able to, this is not EKS specific. Give a try and let me know if you run into any issues. Just curious, if you are already using AWS, why not just spin up a EKS (one eksctl command)? Instead of use kubeadm, a lot of things you need to manage by yourself. Or you just want to learn from the hard way.
